Hi everyone!
It’s time to plan our menus for the upcoming week. Making a weekly menu does not mean that you will be following it exactly. It is just another tool to help you save time, money and stress.
I really try to plan my menu from my pantry. Meaning, I build around what I already have and then buy the few things I still need.
Monday:
Lemon and Dill Baked Fish
Roasted Herbed Potatoes
Cole Slaw
Vanilla pudding & Fruit Parfaits
Tuesday:

Spinach Stuffed Chicken Breasts
Rice Pilaf
Asian Salad
Pears, Raisins and Walnuts
(use canned pears and juice, cut into bite size chunks, add raisins and walnuts. refrigerate for at least an hour before serving)
Wednesday:
Ground Beef and Mushroom Carbonara
Corn
Jello with Fruit
Thursday:
Ham and Egg Strata
Fresh Veggies
Applesauce
Friday:

Restaurant Night:
TGI Friday’s Nine Layer DipYield: 12 servings.
2 strips lean bacon
1 16 0z Can Refried Beans
Plain 1/2 C. Sour Cream
1/2 tsp. Taco Seasoning
3/4 C. Shredded Cheddar Cheese
3/4 C. Guacamole (Frozen or Prepared is Fine)
1/3 C. Diced Tomatoes (about 1 Romano Tomato)
1 Tbsp. Fresh Cilantro Chopped Finely
2 Tbsp. Sliced Black Olives
2 Tbsp. Finely Sliced Green Onions
Fry diced bacon until done, add refried beans and cook slowly and stirrer frequently until the bacon and bacon drippings are mixed through about 15 minutes, remove from heat. Mix taco seasoning with sour cream and set aside.To built 9 layer dip place ingredients in this order.Place refried beans on serving platter spread out to 1 – 1 1/2 inches thick.1/2 C. shredded cheese1/2 C. prepared sour cream3/4 C. guacamolediced tomatoesdiced cilantroblack olivessliced green onion1/4 C. cheese for garnish
I am going to serve this with baked potatoes to turn it into a meal.

Clean Out Refrigerator Night
Turn all your little dabs of this and that and leftovers into a buffet style meal.
Sunday:
Eat Out (YIPPEE!)

I had a menu planned for last week and even though I got sick two of the meals got prepared. Sigh...now I need to make one for this week. It never ends does it?? hugs, Linda
